RASPBERRY MASH

3 Tablespoons reduced calorie margarine 

2 cups crushed vanilla wafers

1 16 ounce bag frozen raspberries, thawed

1/3 cup sugar

1/3 cup skim milk

2 egg yolks

1 envelope unflavored gelatin

1/2 teaspoon vanilla extract

1/4 teaspoon salt

2 egg whites

1/4 teaspoon cream of tartar

2 tablespoons sugar

Fresh raspberries

 

 

Place margarine in 10" chef pan or large frypan over low heat until melted.  Add crushed wafers, stirring well.  Press mixture evenly over bottom of pan.  Cook on low heat for 10 minutes.  Set aside.  In 2-quart saucepan, mash raspberries, add 1/3 cup sugar, skim milk, egg yolks, gelatin, vanilla and salt.  Cook over medium heat until boiling; stirring every 2 minutes.  Let stand 30-40 minutes or until mixture thickens slightly, or place in refrigerator to cool.

 

Beat egg whites and cream of tartar at high speed, just until foamy.  Gradually add 3 tablespoons sugar, beating until stiff peaks form and sugar dissolves to make meringue (2-4 minutes).  Gently fold raspberry mixture into meringue.  Pour mixture into crust.  Chill 2 hours or until firm.  Garnish with fresh raspberries and mint sprigs.

EASY ONE EGG CAKE

1 1/4 cups unsifted all purpose flour

3/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup shortening

2/3 cup skim milk

1 egg

1 teaspoon vanilla

cooking spray

 

Generously spray 8" chef pan or small frypan with non-stick cooking spray.  In large mixing bowl, combine flour, sugar, baking powder, salt, shortening, and milk.  Blend well at low speed.  Beat 1 1/2 minutes at medium speed.  Add egg and vanilla; continue beating 1-1/2 minutes at medium speed.  Pour batter into pan.  Cook on low heat for 18 minutes with the cover on.  Cake will be golden brown, and the top springs back when lightly touched.  Invert onto plate.

After cake has been inverted, frost or top with fruit filling.

BAKED APPLES

5 whole raw apples (tart works best)

1 tablespoon sugar

1/4 teaspoon cinnamon

4 tablespoons reduced fat butter or margarine

(butter/margarine is optional)

1 cup white or brown sugar

sliced almonds for garnish

raisins for garnish

 

Wash apples.  Remove cores and blemishes.  Pare each apple around the center removing 1/2" of the skin.

Place in 3-quart saucepan.  Mix 1 tablespoon sugar with cinnamon, sprinkle into center of each apple.

 

Optional. Make a syrup using the butter or margarine, 1 cup sugar and water.  Pour over the apples.

 

Cover.  Place over low heat.  Cook 30-40 minutes or until apples are tender.  Garnish with sliced almonds and raisins.
