SKILLET BAKED POTATO
Medium baking potato(es) with skin on

 


 

Thoroughly wash and dry potatoes.  Place in skillet (one that most nearly fits). Cover. Place over medium heat 15 minutes. Reduce heat to low. Bake 25 minutes. Don’t pierce potatoes before baking.


To shorten cooking time, halve or quarter potatoes, put skins to bottom. Brown starch spots where skins touch the pan will appear but will not flavor the food.  Because starch will settle to the bottom, add 1/4 cup water.  

 

SWEET POTATO CASSEROLE
3 large sweet potatoes
